It’s been just about 2 weeks since my surgery. I’m feeling better, but not 100%. Matt asked last night when I was going to get back into the kitchen and start cooking. I’m not going to lie, I miss it. It’s been mashed potatoes out of a box and hot dogs the last few days, in between eating out. Matt can make a mean Lean Cuisine or Lipton Side, but not much else. I was lucky and we stayed at Matt’s parents cottage for a few days and I got some GOOOOD home cooking, and home cooked Middle Eastern food. YUM.
So, honestly, there’s not much “pizza” about these pockets, mostly because they don’t have any pizza sauce – which I’d argue MAKES the pizza. These little pockets are pretty damn good though.

Pizza Pockets
1 package crescent rolls
1/2 cup cheese
pepperoni
green peppers (or other veggie)
crushed red pepper
Unroll the crescent rolls and place pepperoni (I used one each because I didn’t want to open a new package) and green peppers on each roll. Put a small handful of cheese on each triangle and press it in a bit (so it doesn’t spill all over when it’s rolled up).
Roll up each triangle, making sure to not spill the cheese. Fold in each of the sides so that it makes a little pocket. Sprinkle a bit more cheese on each of the pockets and top with a few pieces of crushed red pepper.
Cook according to the crescent roll directions.
These would also work well with regular veggies. I can’t wait to try broccoli with cheddar cheese!
Now I’m back in the saddle, hopefully I’ll be back to my regular posting from now on.
